I imagine that would depend on your setup and what chemicals you will be working with. If you have a fume hood capable of sucking up everything and you're only working underneath that, a normal mask with particle filters and some goggles/lab glasses should be fine. If you're working in an enclosed space (which you shouldn't, but you know there are always gonna be some people) then you will most likely need a full face mask with filters and a canister + full protective clothing. The filters and canisters depend on what chemical you are working with.

StarWarsHonestly, if you are going to splash yourself in the face with chemicals, it doesn't matter if it's a $50 whole-face mask from China or a $500 whole-face mask from America or Europe..

I would buy one that you can use side filters on, but also when you need to, you can connect a hose to and hang the canister from your back/belt.. that shit is heavy my man, especially if you are going to be breathing it for hours, you think a small one is going to last you a long time? You should be wearing a canister only if you are surrounded by fumes or working with something like Bromine or Mercury and it's your first time.. hands shaky... moms spaghetti..

If you are super safe then you should be wearing a full-face mask always, but side filters will work just fine, because you will be working under a fume-hood, right? You are not an idiot to try and lock yourself in an apartment and begin a 30L reaction then distillation, correct? Trust me, there is less work in putting up a nice filtered fume hood, than with learning all about these masks, canisters, protective clothing and dressing up like Walter White...
There are ones that filter out ammonia, depends on what you are working with, like someone already told you.. Normal ones only protect against dust particles.

Loki12Would you recommend just buying a fumehood? I think building one, wouldnt be hard. But building it so theres no chance of electrics sparking fumes ? How would I do that, if I can do that

Depends what you are trying to synthesise and the chemicals you will be using. Usually in the product description it mentions what it protects against, for example organic/inorganic vapours, dust particles, etc.

This depends on what reagents you're working with. Different filters are applicable to different reagents. For instance there are some general filters which you can use for acids. However those won't filter mercury vapor for instance at all. For highly specific compounds you have to buy the intended filters. With masks 1 and 2 you can see that the filters are easily replaceable so I would recommend those. Make sure to replace the filters overtime, they do not last forever unfortunately.
