Tienes la información más importante: Acetaldehído o Piruvato, una levadura adecuada y ph <5.

Nadie hizo la gran y obvia pregunta: ¿Cómo puedo saber si una cepa de levadura es buena o no?
Y como nadie preguntó, no habrá más respuesta que la mención de que existen métodos bastante fáciles.
